Roasted capsicum and chilli dip

Ingredients:
- 1 large red capsicum, quartered
- 150g feta
- 1 garlic clove, crushed
- 1 small red chilli, deseeded, chopped
- 2 tbsp chopped fresh flat-leaf parsley leaves
Instructions
- Preheat a barbecue plate or chargrill on high. Cook capsicum, skin-side down, for 3 minutes or until blistered and blackened. Place in a plastic bag. Seal. Stand for 10 minutes. Peel away skin. Roughly chop.
- Process capsicum, feta, garlic, chilli and parsley until smooth. Refrigerate in an airtight container.
