This delicious savoury cornbread is a delightful accompaniment to your Sunday roast or as part of a barbecue menu.

To make this dish at home by prescription from the author Gomer would need: Olive oil, to grease, Plain flour, to dust, 150g plain flour, 3 1/2 tsp baking powder, 1 tsp salt , 170g cornmeal, 1 tsp caster sugar, 250ml milk , 60ml vegetable oil, 1 egg, lightly whisked, Pulled pork and coleslaw , to serve.
Ingredients:
- Olive oil, to grease
- Plain flour, to dust
- 150g plain flour
- 3 1/2 tsp baking powder
- 1 tsp salt
- 170g cornmeal
- 1 tsp caster sugar
- 250ml milk
- 60ml vegetable oil
- 1 egg, lightly whisked
- Pulled pork and coleslaw , to serve
Instructions
- Preheat oven to 220C or 200C fan-forced. Brush an 11 x 22cm (base measurement) (1.25L/5-cup) loaf pan with the olive oil to lightly grease. Lightly dust with flour and shake out the excess.
- Sift flour, baking powder and salt into a bowl. Add cornmeal, sugar, milk, oil and egg, and use a wooden spoon to stir until well combined.
- Pour the mixture into the prepared pan. Bake in preheated oven for 25-30 minutes or until a skewer inserted into the centre comes out clean. Set aside for 5 minutes before turning onto a wire rack. Serve warm or at room temperature with pulled beef and coleslaw.
