Crunchy cos and dill salad

Ingredients:

  • 2 baby cos lettuce heads, leaves separated 
  • 1/4 cup fresh dill sprigs 
  • 1/2 small red onion, thinly sliced into rounds 
  • 1 tbsp extra virgin olive oil 
  • 2 tbsp lemon juice 

Instructions

  1. Roughly shred lettuce into 2cm-thick strips. Place in a large serving bowl with dill. Toss to combine.
  2. Top salad with onion. Drizzle with oil and lemon juice. Season with salt and pepper. Serve immediately.
