Lentil stew

This simple, vegan lentil stew is a hearty dinner recipe for when nights grow colder.

To make this dish at home by prescription from the author Gomer would need: 2 tbsp olive oil, 1 brown onion, finely chopped, 1 celery stick, finely chopped, 3 garlic cloves, thinly sliced, 1 tbsp finely chopped fresh oregano leaves, plus extra to serve , 1 1/2 cups French style green lentils, rinsed, drained, 1L Massel vegetable liquid stock, 400g can cherry tomatoes , Roti bread and yoghurt, to serve.
Ingredients:
- 2 tbsp olive oil
- 1 brown onion, finely chopped
- 1 celery stick, finely chopped
- 3 garlic cloves, thinly sliced
- 1 tbsp finely chopped fresh oregano leaves, plus extra to serve
- 1 1/2 cups French style green lentils, rinsed, drained
- 1L Massel vegetable liquid stock
- 400g can cherry tomatoes
- Roti bread and yoghurt, to serve
Instructions
- Heat oil in a large saucepan over medium heat. Cook onion, celery, garlic and oregano, stirring, for 10 minutes or until softened. Stir in lentils. Add Massel Liquid Stock Vegetable Style and bring to the boil over high heat. Reduce heat to medium-low and simmer, covered, for 45 minutes. Stir through tomatoes and simmer, covered, for another 15 minutes. Season.
- Serve sprinkled with extra oregano, roti bread and yoghurt.
