To make this dish at home by prescription from the author Gomer would need: 1 1/2 cups SunRice Naturally Rice & Quinoa, 1 head broccoli, cut into long florets, 2 tbsp extra-virgin olive oil, 4 garlic cloves, thinly sliced, 1 bunch kale, trimmed, thinly shredded , 1 1/2 tbsp cider vinegar, 2/3 cup low-fat cottage cheese, 1/3 natural slivered almonds, toasted , 1 tbsp chopped chives.

Ingredients:

  • 1 1/2 cups SunRice Naturally Rice & Quinoa 
  • 1 head broccoli, cut into long florets 
  • 2 tbsp extra-virgin olive oil 
  • 4 garlic cloves, thinly sliced 
  • 1 bunch kale, trimmed, thinly shredded 
  • 1 1/2 tbsp cider vinegar 
  • 2/3 cup low-fat cottage cheese 
  • 1/3 natural slivered almonds, toasted 
  • 1 tbsp chopped chives 

Instructions

  1. Cook SunRice Naturally Rice & Quinoa following packet directions.
  2. Meanwhile, cook broccoli in a small saucepan of boiling salted water for 2-3 minutes or until just tender. Drain well.
  3. Heat oil in a large saucepan over medium heat. Cook garlic for 4-5 minutes or until golden. Increase heat to medium-high and cook kale, stirring, for 1-2 minutes or until bright green. Season and add vinegar. Toss and remove from the heat. Toss through rice mixture.
  4. Serve warm or at room temperature topped with broccoli, cottage cheese, almonds and chives.
