This sensational noodle dish is a quick, healthy vegetarian dish that the whole family will enjoy.

To make this dish at home by prescription from the author Gomer would need: 200g sweet potato noodles, 1 tbsp vegetable oil, 1 brown onion, thinly sliced, 4 cups chopped vegetables, 2 garlic cloves, thinly sliced , 1 tbsp salt-reduced soy sauce, 6 eggs, 1/4 cup kimchi , 300g silken firm tofu, sliced, 2 tbsp black sesame seeds, toasted.

Ingredients:

  • 200g sweet potato noodles 
  • 1 tbsp vegetable oil 
  • 1 brown onion, thinly sliced 
  • 4 cups chopped vegetables 
  • 2 garlic cloves, thinly sliced 
  • 1 tbsp salt-reduced soy sauce 
  • 6 eggs 
  • 1/4 cup kimchi 
  • 300g silken firm tofu, sliced 
  • 2 tbsp black sesame seeds, toasted 

Instructions

  1. Cook noodles in a large saucepan of boiling water for 5 minutes or until tender. Drain and rinse under running water.
  2. Meanwhile, heat 2 teaspoons of vegetable oil in a wok or large frying pan over high heat. Stir-fry onion for 2 minutes or until lightly charred and just tender. Set aside. Add chopped vegetables and stir-fry for 4 minutes. Add garlic and stir-fry for another minute or until vegetables are just tender. Return onion to pan with soy sauce and sesame oil and stir-fry to coat.
  3. Meanwhile, heat remaining vegetable oil in a large non-stick frying pan over medium-high heat. Cook eggs for 2-3 minutes or until white is set.
  4. Divide noodles between 4 bowls. Arrange stir-fried vegetables, egg, kimchi and tofu over noodles. Sprinkle with sesame seeds.
