  • 2 x 175g pkts San Remo Microwavable CousCous with Vegetables 
  • 250g frozen chopped spinach, thawed 
  • 100g soft feta, finely crumbled 
  • 1 egg yolk 
  • 1 lemon, plus lemon wedges, to serve 

Instructions

  1. Prepare couscous following packet directions. Place in a large bowl.
  2. Squeeze out excess moisture from spinach. Grate lemon (you'll need 1 teaspoon of rind) and squeeze juice (you’ll need 1 1/2 tablespoons). Add spinach, egg yolk, lemon rind and juice to couscous. Season and toss to combine. Divide the mixture into 8 portions. Using damp hands, form eight 6.5cm wide patties.
  3. Heat a large, greased, non-stick frying pan over medium-high heat. Cook patties for 1-2 minutes each side or until warm and golden. Serve with lemon wedges.
