Pea, mint and feta frittatas

To make this dish at home by prescription from the author Gomer would need: 6 eggs, 1/2 cup pure cream, 1/3 cup grated parmesan cheese or vegetarian hard cheese, 2 garlic cloves, crushed, 1/2 cup frozen peas , 2 tbsp chopped fresh mint leaves, 3 green onions, trimmed, finely chopped, 50g feta, crumbled .

Ingredients:

  • 6 eggs 
  • 1/2 cup pure cream 
  • 1/3 cup grated parmesan cheese or vegetarian hard cheese 
  • 2 garlic cloves, crushed 
  • 1/2 cup frozen peas 
  • 2 tbsp chopped fresh mint leaves 
  • 3 green onions, trimmed, finely chopped 
  • 50g feta, crumbled 

Instructions

  1. Preheat oven to 190°C/170°C fan-forced. Grease two 12-hole, 1 1/2 tablespoon-capacity round-based patty pans.
  2. Make Basic frittata mix: Whisk eggs, cream, cheese and garlic together in a jug. Season with salt and pepper.
  3. Combine peas, mint and onion in a bowl. Spoon evenly into holes of prepared pan. Top with frittata mix. Sprinkle with feta. Bake for 10 to 12 minutes or until set. Serve.
