Sweet chilli tofu burger

To make this dish at home by prescription from the author Gomer would need: 2 tbsp sweet chilli sauce plus extra to serve, 3 tsp soy sauce, 1 tsp finely grated fresh ginger, 375g firm tofu, drained, 3 tsp olive oil , 1 large onion, thinly sliced, 420g loaf Turkish bread, cut into 4 pieces, halved horizontally, 1 small avocado, halved, stone removed , 2 Lebanese cucumber, peeled into ribbons.

Ingredients:

  • 2 tbsp sweet chilli sauce plus extra to serve 
  • 3 tsp soy sauce 
  • 1 tsp finely grated fresh ginger 
  • 375g firm tofu, drained 
  • 3 tsp olive oil 
  • 1 large onion, thinly sliced 
  • 420g loaf Turkish bread, cut into 4 pieces, halved horizontally 
  • 1 small avocado, halved, stone removed 
  • 2 Lebanese cucumber, peeled into ribbons 

Instructions

  1. Combine the sweet chilli, soy sauce and ginger in a shallow rectangular dish. Cut the tofu in half crossways then in half horizontally to make 4 pieces. Turn over in the marinade. Cover. Set aside in the fridge for 1 hour.
  2. Meanwhile, heat 1 teaspoon oil in a large frying pan over a medium-high heat. Add the onion. Cover and cook for 8 minutes, stirring occasionally. Remove. Set aside.
  3. Wipe the frying pan clean. Heat the remaining oil over medium heat. Remove the tofu from the marinade. Cook for 2 minutes each side or until golden.
  4. Toast the bread. Spread the avocado flesh over half of the bread slices. Top with the cucumber, tofu and onion. Serve with the bread lid on the side and extra sweet chilli sauce, if desired.
