Ingredients:

  • 1/3 cup extra virgin olive oil 
  • 3 garlic cloves, thinly sliced 
  • 8 vine-ripened tomatoes, seeds removed, chopped 
  • 375g fresh lasagne sheets, roughly torn 
  • 200g brie, sliced 
  • Basil leaves, to serve 

Instructions

  1. Place the oil and garlic in a cold frypan and place over medium heat. Cook for 3-4 minutes, stirring, until softened. Add tomato, season and remove from heat.
  2. Meanwhile, cook pasta in boiling, salted water according to packet instructions. Drain, then toss the pasta with sauce. Top with brie and basil. Season and serve.
