Sweet corn and zucchini ratatouille

A delicious healthy vegetable packed ratatouille by Curtis Stone. Great as a side dish!

To make this dish at home by prescription from the author Gomer would need: 3 tbsp olive oil, 2 small red onions, medium dice, 4 garlic cloves, finely chopped, 2 red capsicum, medium dice, 2 green capsicum, medium dice , 6 zucchini, medium dice, green parts only, 4 ears fresh yellow sweet corn, husk removed, 1/2 cup fresh parsley, finely chopped , 4 tbsp fresh thyme, chopped, 1/2 cup basil leaves, finely chopped, 4 tbsp fresh lemon juice.

Ingredients:

  • 3 tbsp olive oil 
  • 2 small red onions, medium dice 
  • 4 garlic cloves, finely chopped 
  • 2 red capsicum, medium dice 
  • 2 green capsicum, medium dice 
  • 6 zucchini, medium dice, green parts only 
  • 4 ears fresh yellow sweet corn, husk removed 
  • 1/2 cup fresh parsley, finely chopped 
  • 4 tbsp fresh thyme, chopped 
  • 1/2 cup basil leaves, finely chopped 
  • 4 tbsp fresh lemon juice 

Instructions

  1. Heat the oil in a large sauce pot over medium-high heat.
  2. Add the onions and saute for about 4 minutes or until slightly softened.
  3. Add the garlic and saute for about 30 seconds or until fragrant.
  4. Add the red and green capsicum and saute for about 4 minutes or until slightly softened.
  5. Add the zucchini and corn and saute for about 5 minutes or until they are crisp-tender.
  6. Stir in the parsley, thyme, basil leaves and lemon juice.
  7. Season to taste with salt and pepper and serve.
