Crunchy little pappadums make a tasty mid-morning snack.

To make this dish at home by prescription from the author Gomer would need: 12 mini pappadums, 200g natural yoghurt, 1 Lebanese cucumber, 1 tbsp chopped fresh mint, 8 cherry tomatoes , lettuce leaves, olive oil spray .

Ingredients:

  • 12 mini pappadums 
  • 200g natural yoghurt 
  • 1 Lebanese cucumber 
  • 1 tbsp chopped fresh mint 
  • 8 cherry tomatoes 
  • lettuce leaves 
  • olive oil spray 

Instructions

  1. Spray 12 mini pappadums with olive oil spray. Place 2 pappadums on a plate lined with non-stick baking paper. Cook on High/800watts/100% for 1-2 minutes or until crisp. Repeat with remaining pappadums. Combine 200g natural yoghurt, 1 Lebanese cucumber, finely chopped, and 1 tablespoon chopped fresh mint in a bowl. Cut 8 cherry tomatoes into quarters. Line pappadums with lettuce leaves. Top with yoghurt mixture and tomato to serve.
