Ingredients:
- 1/2 cup plain flour
- 1/2 tsp baking powder
- 1 egg
- 1/3 cup water
- 1 large potato
- Light olive oil, to fry
- Plain flour, extra, to dust
- Sea salt flakes and tartare sauce, to serve
Instructions
- Cook 1 large potato in boiling water until tender. Cool. Thickly slice into 8 slices.
- Whisk flour with baking powder. Make a well in the centre and add egg. Gradually add water, whisking to form a smooth batter.
- Pour light olive oil to one-third of the way up the side of a medium saucepan. Heat to 180C over high heat
- Lightly dust the slices of potato in plain flour then dip in the batter, shaking off excess. Cook in the oil, in 2 batches, for 2 minutes or until golden. Sprinkle with sea salt flakes. Serve with tartare sauce.
