Ingredients:

  • 800g potatoes, peeled, coarsely chopped 
  • 2 large parsnips, peeled, quartered lengthways, thinly sliced 
  • 20g butter, at room temperature 
  • 60ml pouring cream 

Instructions

  1. Place the potato and parsnip in a large saucepan. Add enough water to cover. Bring to the boil over high heat and cook for 15 minutes or until tender.
  2. Drain the parsnip mixture and return to the pan. Add the butter and use a potato masher to mash until well combined. Beat in the cream. Season with salt and pepper.
