To make this dish at home by prescription from the author Gomer would need: 1 2/3 cups self-raising flour, 1 tsp baking powder, 4 eggs, 2 tbsp olive oil, 1 tbsp white wine , 2 tbsp tomato puree, 150g cheddar cheese, grated, 75g pitted black olives, chopped , 6 sun-dried tomatoes, chopped, 3 tsp mixed chopped herbs.

Ingredients:

  • 1 2/3 cups self-raising flour 
  • 1 tsp baking powder 
  • 4 eggs 
  • 2 tbsp olive oil 
  • 1 tbsp white wine 
  • 2 tbsp tomato puree 
  • 150g cheddar cheese, grated 
  • 75g pitted black olives, chopped 
  • 6 sun-dried tomatoes, chopped 
  • 3 tsp mixed chopped herbs 

Instructions

  1. Preheat oven to 200°C. Grease and line a 450g loaf pan.
  2. Sift the flour and baking powder into a bowl. In a separate bowl, combine eggs, oil and wine, then add to flour with the tomato puree and mix to a moist dough.
  3. Stir in cheese, olives, tomatoes and herbs, and season with salt and pepper. Pour into prepared pan and bake for 30 minutes, then reduce temperature to 160°C and bake for a further 20 minutes.
  4. Cool slightly in the pan, then turn out onto a wire rack and cool completely.
