Ingredients:
- 825g can sliced peaches in natural juice, drained
- 1/4 cup plain flour
- 1/4 cup caster sugar
- 2 eggs, lightly beaten
- 1/2 cup skim milk
- 1/2 cup thickened light cream
- 1 tsp vanilla extract
- pure icing sugar, to serve
Instructions
- Preheat oven to 180°C. Lightly grease four 1-cup capacity ovenproof ramekins. Divide peaches between the ramekins.
- Combine flour and sugar in a bowl. Whisk together eggs, milk, cream and vanilla. Add egg mixture to flour mixture. Whisk until smooth.
- Pour mixture over peaches. Place ramekins on a baking tray. Bake for 25 to 30 minutes or until just set. Stand for 5 minutes. Dust with icing sugar. Serve.
