To make this dish at home by prescription from the author Gomer would need: 50g yellow mustard seeds, 45g brown mustard seeds, 1 tsp drained green peppercorns, rinsed and dried, 1 tsp dried tarragon leaves, 1/4 tsp caraway seeds , 125ml white wine vinegar, 1/4 tsp ground allspice, 1/2 tsp brown sugar, or to taste , 1/4 tsp salt, or to taste.

Ingredients:

  • 50g yellow mustard seeds 
  • 45g brown mustard seeds 
  • 1 tsp drained green peppercorns, rinsed and dried 
  • 1 tsp dried tarragon leaves 
  • 1/4 tsp caraway seeds 
  • 125ml white wine vinegar 
  • 1/4 tsp ground allspice 
  • 1/2 tsp brown sugar, or to taste 
  • 1/4 tsp salt, or to taste 

Instructions

  1. Place yellow and brown mustard seeds, peppercorns, tarragon and caraway in the bowl of a food processor and process until coarsely ground.
  2. Add vinegar, allspice, sugar and salt, and process until combined but still grainy in texture. Taste and season with extra sugar or salt, if desired.
  3. Spoon into sterilised jars, seal, label and date. Store at room temperature for 1 week for the flavour to develop and mature before using.
