To make this dish at home by prescription from the author Gomer would need: 50g yellow mustard seeds, 45g brown mustard seeds, 1 tsp drained green peppercorns, rinsed and dried, 1 tsp dried tarragon leaves, 1/4 tsp caraway seeds , 125ml white wine vinegar, 1/4 tsp ground allspice, 1/2 tsp brown sugar, or to taste , 1/4 tsp salt, or to taste.
Ingredients:
- 50g yellow mustard seeds
- 45g brown mustard seeds
- 1 tsp drained green peppercorns, rinsed and dried
- 1 tsp dried tarragon leaves
- 1/4 tsp caraway seeds
- 125ml white wine vinegar
- 1/4 tsp ground allspice
- 1/2 tsp brown sugar, or to taste
- 1/4 tsp salt, or to taste
Instructions
- Place yellow and brown mustard seeds, peppercorns, tarragon and caraway in the bowl of a food processor and process until coarsely ground.
- Add vinegar, allspice, sugar and salt, and process until combined but still grainy in texture. Taste and season with extra sugar or salt, if desired.
- Spoon into sterilised jars, seal, label and date. Store at room temperature for 1 week for the flavour to develop and mature before using.
