Golden sweet potato with sharp goats cheese is one tasty pizza topping.

To make this dish at home by prescription from the author Gomer would need: 440g pkt pizza bases, 2 garlic cloves, crushed, 60ml extra virgin olive oil, 430g sweet potato , peeled, thinly sliced, 1 small red onion, halved, thinly sliced , 1 tbsp chopped fresh rosemary, 2 tbsp pine nuts, 100g coarsely grated mozzarella , 120g soft goat’s cheese, crumbled, 150g pkt mixed salad leaves, 1 1/2 tbsp fresh lemon juice.

Ingredients:

  • 440g pkt pizza bases 
  • 2 garlic cloves, crushed 
  • 60ml extra virgin olive oil 
  • 430g sweet potato , peeled, thinly sliced 
  • 1 small red onion, halved, thinly sliced 
  • 1 tbsp chopped fresh rosemary 
  • 2 tbsp pine nuts 
  • 100g coarsely grated mozzarella 
  • 120g soft goat’s cheese, crumbled 
  • 150g pkt mixed salad leaves 
  • 1 1/2 tbsp fresh lemon juice 

Instructions

  1. Preheat oven to 230°C. Place the pizza bases on 2 large baking trays.
  2. Combine garlic and 3 teaspoons of oil in a bowl. Brush over pizza bases. Combine the sweet potato, onion, rosemary and 3 teaspoons of the remaining oil in a bowl. Spread over the pizza. Sprinkle with the pine nuts, mozzarella and goat’' cheese. Bake for 12-15 minutes or until the sweet potato is tender.
  3. Place salad leaves in a bowl. Combine the lemon juice and remaining oil in a jug and pour over salad. Toss to combine. Serve the pizza with salad.
