Feta and tzatziki add tang to these healthy, high-fibre zucchini and sweet potato burgers.

To make this dish at home by prescription from the author Gomer would need: 600g sweet potato, peeled, cut into 2cm pieces, 1 small brown onion, finely chopped, 1 garlic clove, crushed, 1 small zucchini, trimmed, grated, excess moisture removed, 50g low-fat feta, crumbled , 35g oat bran, 55g sunflower seed kernels, 2 multigrain bread rolls, halved , 80ml low-fat tzatziki, Thinly sliced tomato, to serve, Baby spinach leaves, to serve.

Ingredients:

  • 600g sweet potato, peeled, cut into 2cm pieces 
  • 1 small brown onion, finely chopped 
  • 1 garlic clove, crushed 
  • 1 small zucchini, trimmed, grated, excess moisture removed 
  • 50g low-fat feta, crumbled 
  • 35g oat bran 
  • 55g sunflower seed kernels 
  • 2 multigrain bread rolls, halved 
  • 80ml low-fat tzatziki 
  • Thinly sliced tomato, to serve 
  • Baby spinach leaves, to serve 

Instructions

  1. Preheat oven to 200C. Place sweet potato on a lined baking tray. Spray with oil. Season with pepper. Roast for 25 minutes or until tender. Transfer to a large bowl. Mash. Set aside to cool.
  2. Reduce oven to 180C. Heat a non-stick frying pan over medium heat. Spray with oil. Cook onion, stirring, for 3-4 minutes or until soft. Stir in garlic for 1 minute or until aromatic. Cool.
  3. Stir onion mixture, zucchini, feta and bran into mash. Shape into 4 patties. Place sunflower seeds on a plate. Add patties and press to coat. Cover and chill for 20 minutes or until firm.
  4. Spray patties with oil. Bake on a lined baking tray for 15-20 minutes or until golden. Serve on bread roll with tzatziki, spinach and tomato.
