Ingredients:

  • 185ml water 
  • 100g caster sugar 
  • 350g white chocolate, coarsely chopped 
  • 20g butter, chopped 
  • 1 tsp finely grated orange rind 
  • 2 tbsp finely chopped unsalted pistachio kernels 

Instructions

  1. Place the water and sugar in a saucepan over low heat. Stir until the sugar dissolves.
  2. Increase heat to medium and bring to the boil. Add the chocolate. Use a balloon whisk to whisk until the mixture returns to the boil.
  3. Remove from heat. Whisk in the butter, orange rind and pistachio. Set aside, stirring occasionally, to cool completely. Pour into an airtight glass bottle or jar.
