Ingredients:
- 1/2 cup raisins, finely chopped
- 1/3 cup marsala, warmed*
- 1kg fresh full-fat ricotta cheese
- 2/3 cup caster sugar
- 3 eggs
- 1/2 cup cream
- 1 orange, rind finely grated
- icing sugar, to serve
Instructions
- Preheat oven to 150°C. Grease and line base and sides of a 5.5cm deep, 24cm (base) springform pan. Combine raisins and marsala in a bowl. Set aside for 30 minutes.
- Beat ricotta and sugar until smooth. Add eggs, 1 at a time, beating well after each addition. Beat in cream. Fold in orange rind, raisins and any remaining marsala.
- Pour mixture into prepared pan. Smooth surface. Bake for 50 to 60 minutes or until firm in the centre. Turn oven off. Leave door ajar for 3 hours.
- Refrigerate for 4 hours or until chilled. Dust with icing sugar. Serve.
