To make this dish at home by prescription from the author Gomer would need: 1 tbsp olive oil, 1 tbsp butter, 1 brown onion, finely chopped, 2 garlic cloves, crushed, 1 cup Basmati rice , 2 cups Massel salt reduced chicken style liquid stock, 1/2 tsp saffron threads, 1/2 cup roasted salted cashew nuts , 1/4 cup currants, thick Greek-style natural yoghurt and 1 green onion, diagonally sliced, to serve.

Ingredients:

  • 1 tbsp olive oil 
  • 1 tbsp butter 
  • 1 brown onion, finely chopped 
  • 2 garlic cloves, crushed 
  • 1 cup Basmati rice 
  • 2 cups Massel salt reduced chicken style liquid stock 
  • 1/2 tsp saffron threads 
  • 1/2 cup roasted salted cashew nuts 
  • 1/4 cup currants 
  • thick Greek-style natural yoghurt and 1 green onion, diagonally sliced, to serve 

Instructions

  1. Place oil, butter, onion and garlic into a 2-litre capacity heatproof, microwave-safe bowl. Cook, uncovered, on HIGH (100%) power for 3 minutes or until onion is tender.
  2. Add rice, stock and saffron. Cover with a lid or double layer of plastic wrap. Cook, covered, on MEDIUM (50%) power for 15 minutes or until rice has absorbed stock.
  3. Add cashew nuts, currants, and salt and pepper. Stir until well combined.
