Marinated Greek feta

Make your own marinated feta to serve with antipasto platters, in salads or even on Greek-style pizzas.

To make this dish at home by prescription from the author Gomer would need: 500g Greek feta, 1 1/2 cups olive oil, 1/4 tsp cracked black pepper, 1/2 tsp dried Greek oregano, 1 bay leaf , 500g marinated kalamata olives, Crusty bread, to serve .
Ingredients:
- 500g Greek feta
- 1 1/2 cups olive oil
- 1/4 tsp cracked black pepper
- 1/2 tsp dried Greek oregano
- 1 bay leaf
- 500g marinated kalamata olives
- Crusty bread, to serve
Instructions
- Cut feta into 2cm cubes. Place in a large, shallow ceramic dish. Combine oil, pepper, oregano and bay leaf in a jug. Pour over feta. Cover and refrigerate overnight (or longer if time permits).
- Serve feta on mezze plates with olives, skordalia (see related recipe) and crusty bread.
