Ingredients:
- 250g dried brown or green lentils
- 1/4 cup olive oil
- 1 small red onion, finely chopped
- 1 large carrot, peeled, finely chopped
- 1/4 cup flat-leaf parsley
- 1 orange, rind finely grated, juiced
Instructions
- Wash and drain lentils. Place into a saucepan with 4 cups of cold water. Bring to the boil over high heat. Reduce heat to medium-low. Cover and simmer for 30 minutes, or until tender. Drain. Rinse under cold water. Transfer to a bowl.
- Heat 1 tablespoon of oil in a large non-stick frying pan. Add onion and carrot. Cook, stirring occasionally, for 3 minutes, or until just tender. Stir into lentils with parsley and orange rind.
- Combine orange juice, remaining 2 tablespoons of oil, and salt and pepper, in a jug. Whisk with a fork to combine. Pour dressing over lentil salad. Toss gently to combine. Serve.
