Ingredients:

  • 1 bunch asparagus, trimmed, cut in half crossways 
  • 1 egg 
  • 2 tbsp plain flour 
  • 1 cup fresh breadcrumbs, finely chopped 
  • Peanut oil, to fry 
  • Aioli, to serve 

Instructions

  1. Lightly whisk egg in a bowl.
  2. Place plain flour in a separate bowl. Place 1 cup fine fresh breadcrumbs in another bowl.
  3. Heat enough peanut oil to come one-third up the side of the wok.
  4. Dust the asparagus pieces with flour. Dip in the egg and then the crumbs, pressing down firmly. Cook in batches for 1-2 minutes or until golden. Serve with aioli.
