Ingredients:
- 1 bunch asparagus, trimmed, cut in half crossways
- 1 egg
- 2 tbsp plain flour
- 1 cup fresh breadcrumbs, finely chopped
- Peanut oil, to fry
- Aioli, to serve
Instructions
- Lightly whisk egg in a bowl.
- Place plain flour in a separate bowl. Place 1 cup fine fresh breadcrumbs in another bowl.
- Heat enough peanut oil to come one-third up the side of the wok.
- Dust the asparagus pieces with flour. Dip in the egg and then the crumbs, pressing down firmly. Cook in batches for 1-2 minutes or until golden. Serve with aioli.
