To make this dish at home by prescription from the author Gomer would need: 500g rhubarb, trimmed, washed, dried, coarsely chopped, 1 brown onion, halved, finely chopped 250ml cider vinegar, 500g brown sugar, 1 tsp ground ginger, 1/2 tsp ground cinnamon , 1/2 tsp ground allspice, 1/4 tsp ground cloves, Salt & freshly ground black pepper .

Ingredients:

  • 500g rhubarb, trimmed, washed, dried, coarsely chopped 
  • 1 brown onion, halved, finely chopped 250ml cider vinegar 
  • 500g brown sugar 
  • 1 tsp ground ginger 
  • 1/2 tsp ground cinnamon 
  • 1/2 tsp ground allspice 
  • 1/4 tsp ground cloves 
  • Salt & freshly ground black pepper 

Instructions

  1. Combine the rhubarb, onion, vinegar, sugar, ginger, cinnamon, allspice and cloves in a large saucepan over medium heat. Cook, stirring occasionally, for 30 minutes or until relish thickens. Taste and season with salt and pepper.
  2. Remove from heat and set aside for 1 hour to cool. Transfer to a small bowl to serve.
