Black pepper rice

To make this dish at home by prescription from the author Gomer would need: 60g ghee, 1 brown onion, finely chopped, 1 long green chilli, seeded, finely chopped, 12 fresh curry leaves, 1 tsp black mustard seeds , 1 tsp cumin seeds, 3 green cardamom pods, bruised, 1/2 tsp freshly ground black pepper , 1 tsp salt, 2 cups Basmati rice, 2 1/2 cups water.

Ingredients:

  • 60g ghee 
  • 1 brown onion, finely chopped 
  • 1 long green chilli, seeded, finely chopped 
  • 12 fresh curry leaves 
  • 1 tsp black mustard seeds 
  • 1 tsp cumin seeds 
  • 3 green cardamom pods, bruised 
  • 1/2 tsp freshly ground black pepper 
  • 1 tsp salt 
  • 2 cups Basmati rice 
  • 2 1/2 cups water 

Instructions

  1. Heat ghee in a large saucepan over medium heat. Add onion. Cook for 8-10 minutes or until golden brown. Add chilli, curry leaves, mustard, cumin, cardamom, pepper and salt. Cook, stirring, for 1 minute or until aromatic. Add rice. Cook, stirring, for 1 minute or until rice is coated. Add water. Bring to the boil. Reduce heat to low. Cook, covered, for 12 minutes or until liquid is absorbed.
  2. Set aside, covered, for 10 minutes to cool slightly. Use a fork to separate grains. Serve immediately.
