To make this dish at home by prescription from the author Gomer would need: 2 garlic cloves, 5 tbsp extra virgin olive oil, 3 tbsp red wine vinegar, 4 large vine-ripened tomatoes, cut into chunks, 1 red onion, thinly sliced , 1 red capsicum, roasted, peeled, cut into strips, 1 yellow capsicum, roasted, peeled, cut into strips, 1 telegraph cucumber, peeled, seeded, cut into chunks , 4 thick slices of Italian wood-fired bread, toasted, 1 cup torn fresh basil leaves.

Ingredients:

  • 2 garlic cloves 
  • 5 tbsp extra virgin olive oil 
  • 3 tbsp red wine vinegar 
  • 4 large vine-ripened tomatoes, cut into chunks 
  • 1 red onion, thinly sliced 
  • 1 red capsicum, roasted, peeled, cut into strips 
  • 1 yellow capsicum, roasted, peeled, cut into strips 
  • 1 telegraph cucumber, peeled, seeded, cut into chunks 
  • 4 thick slices of Italian wood-fired bread, toasted 
  • 1 cup torn fresh basil leaves 

Instructions

  1. Crush 1 clove of garlic and whisk with the oil and vinegar. Season with salt and freshly ground black pepper.
  2. Place the tomato, onion, capsicum and cucumber in a bowl and pour over the dressing. Cover and set aside at room temperature for 1 hour.
  3. Grill or chargrill the bread until golden and while still warm, rub with the remaining garlic clove (cut it in half first).
  4. Break bread into bite-sized pieces and add to salad with the basil. Toss well before serving.
