To make this dish at home by prescription from the author Gomer would need: 1/3 cup passionfruit pulp, 1/4 cup caster sugar, 1/4 cup water, 350g lychees, 8 x 1cm thick slices madeira cake , 1/3 cup double thick cream .
Ingredients:
- 1/3 cup passionfruit pulp
- 1/4 cup caster sugar
- 1/4 cup water
- 350g lychees
- 8 x 1cm thick slices madeira cake
- 1/3 cup double thick cream
Instructions
- Combine the passionfruit pulp, sugar and water in a small saucepan and stir to dissolve the sugar. Bring to the boil, reduce the heat and simmer for 5 minutes. Pour through a strainer and leave to cool slightly.
- Use your fingers to peel the skin off the lychees and cut in half around the stone. Pull apart and discard the stone.
- Place a slice of Madeira cake onto each dessert plate. Top with a generous dollop of cream, then some lychees. Place another slice of cake on top. Drizzle with the passionfruit syrup and serve topped with more lychees.
