Roast smashed potatoes

These slightly mashed potatoes are slowly roasted in olive oil and sea salt until crispy and golden.

Ingredients:

  • 8 small potatoes, scrubbed 
  • 2 tbsp olive oil 
  • Sea salt, to season 

Instructions

  1. Preheat oven to 180C or 160C fan. Line a baking tray with non-stick baking paper. Microwave or steam potatoes for 5 mins until just tender.
  2. Place potatoes on prepared tray. Using a fork, lightly squash each potato. Drizzle with oil and scatter over sea salt.
  3. Bake for 30 mins until golden and crisp.
