Roast ripe tomatoes and capsicum with sugar and spice to create a super salsa.

To make this dish at home by prescription from the author Gomer would need: 3 truss tomatoes, halved, 1 red capsicum, seeded, quartered, 1 red onion, coarsely chopped, 3 garlic cloves, bruised, 2 tbsp olive oil , 1 tbsp brown sugar, 1 1/2 tsp mild paprika .

Ingredients:

  • 3 truss tomatoes, halved 
  • 1 red capsicum, seeded, quartered 
  • 1 red onion, coarsely chopped 
  • 3 garlic cloves, bruised 
  • 2 tbsp olive oil 
  • 1 tbsp brown sugar 
  • 1 1/2 tsp mild paprika 

Instructions

  1. Preheat oven to 180C. Combine tomato, capsicum, onion, garlic, oil, sugar and paprika in a large roasting pan. Season. Roast, stirring once, for 45 minutes or until vegetables are tender. Cool for 15 minutes.
  2. Process in a food processor until coarsely chopped and thick.
