To make this dish at home by prescription from the author Gomer would need: 500g sebago potatoes, cut into wedges, 500g orange sweet potato, cut into wedges, 4 carrots, cut into wedges, 1 tbsp olive oil, 1 tsp ground coriander , 1 tsp sweet smoked paprika, 1/2 cup extra-light sour cream, 1/3 cup plain low-fat yoghurt , 1 tsp chilli flakes, 2 tsp finely grated lemon rind.
Ingredients:
- 500g sebago potatoes, cut into wedges
- 500g orange sweet potato, cut into wedges
- 4 carrots, cut into wedges
- 1 tbsp olive oil
- 1 tsp ground coriander
- 1 tsp sweet smoked paprika
- 1/2 cup extra-light sour cream
- 1/3 cup plain low-fat yoghurt
- 1 tsp chilli flakes
- 2 tsp finely grated lemon rind
Instructions
- Preheat oven to 200°C/180°C fan-forced. Place potato and carrot in a saucepan. Cover with cold water. Bring to the boil over high heat. Cook, partially covered, for 10 minutes or until almost tender. Drain.
- Combine potato, carrot, oil, coriander and paprika in a baking dish. Toss to coat. Bake for 45 minutes or until golden.
- Meanwhile, make spiced sour cream: Place ingredients in a bowl. Stir to combine. Serve wedges with spiced sour cream.
