To make this dish at home by prescription from the author Gomer would need: 500g sebago potatoes, cut into wedges, 500g orange sweet potato, cut into wedges, 4 carrots, cut into wedges, 1 tbsp olive oil, 1 tsp ground coriander , 1 tsp sweet smoked paprika, 1/2 cup extra-light sour cream, 1/3 cup plain low-fat yoghurt , 1 tsp chilli flakes, 2 tsp finely grated lemon rind.

Ingredients:

  • 500g sebago potatoes, cut into wedges 
  • 500g orange sweet potato, cut into wedges 
  • 4 carrots, cut into wedges 
  • 1 tbsp olive oil 
  • 1 tsp ground coriander 
  • 1 tsp sweet smoked paprika 
  • 1/2 cup extra-light sour cream 
  • 1/3 cup plain low-fat yoghurt 
  • 1 tsp chilli flakes 
  • 2 tsp finely grated lemon rind 

Instructions

  1. Preheat oven to 200°C/180°C fan-forced. Place potato and carrot in a saucepan. Cover with cold water. Bring to the boil over high heat. Cook, partially covered, for 10 minutes or until almost tender. Drain.
  2. Combine potato, carrot, oil, coriander and paprika in a baking dish. Toss to coat. Bake for 45 minutes or until golden.
  3. Meanwhile, make spiced sour cream: Place ingredients in a bowl. Stir to combine. Serve wedges with spiced sour cream.
