Ingredients:

  • 550g green or black olives 
  • 2 lemons, rind finely grated, juiced 
  • 2 tbsp olive oil 
  • 2 tbsp rosemary leaves 
  • 1 tbsp lemon thyme leaves 
  • 3 garlic cloves, sliced 
  • 1/2 tsp ground cumin 

Instructions

  1. Place olives onto a flat surface. Using a rolling pin, press down on olives gently so they bruise or split slightly. Transfer olives to a 3-cup capacity screw-top jar.
  2. Combine lemon rind, 1/4 cup lemon juice, oil, herbs, garlic, cumin, and salt and pepper in a bowl. Whisk well to combine. Pour over olives. Secure with lid. Stand for 3 days at room temperature, turning jar upside down a few times each day.
  3. Preheat oven to 180°C. Line a baking tray with baking paper. Remove olives from jar with a slotted spoon. Place onto prepared tray. Bake for 10 to 15 minutes or until warm. Serve.
