Spicy zucchini and haloumi stack

Try this spicy twist on the classic fritter.

To make this dish at home by prescription from the author Gomer would need: 1/2 cup plain flour, 1/2 tsp baking powder, 1 egg, 1/3 cup water, 3 zucchini, coarsely grated , 2 green shallots, trimmed and thinly sliced, 1/4 cup fresh flat-leaf parsley, chopped, 1 tbs fresh mint, chopped , 1/2 tsp chilli powder, 1/2 tsp ground allspice, 2 tbs extra virgin olive oil, 250g haloumi.
Ingredients:
- 1/2 cup plain flour
- 1/2 tsp baking powder
- 1 egg
- 1/3 cup water
- 3 zucchini, coarsely grated
- 2 green shallots, trimmed and thinly sliced
- 1/4 cup fresh flat-leaf parsley, chopped
- 1 tbs fresh mint, chopped
- 1/2 tsp chilli powder
- 1/2 tsp ground allspice
- 2 tbs extra virgin olive oil
- 250g haloumi
Instructions
- Whisk flour with baking powder. Make a well in the centre and add egg. Gradually add water, whisking to form a smooth batter.
- Add zucchini, shallots, parsley,mint, chilli powder and ground allspice.
- Heat 2 tbs extra virgin olive oil in a large non-stick frying pan over high heat. Cook 1/4 cupfuls of batter in the oil, in 2 batches, for 2 minutes each side. Set aside.
- Slice haloumi into 9 slices. Cook for 1 minute each side. Stack, layering the zucchini fritters and haloumi. Sprinkle with fresh mint leaves.
