Spicy zucchini and haloumi stack

To make this dish at home by prescription from the author Gomer would need: 1/2 cup plain flour, 1/2 tsp baking powder, 1 egg, 1/3 cup water, 3 zucchini, coarsely grated , 2 green shallots, trimmed and thinly sliced, 1/4 cup fresh flat-leaf parsley, chopped, 1 tbs fresh mint, chopped , 1/2 tsp chilli powder, 1/2 tsp ground allspice, 2 tbs extra virgin olive oil, 250g haloumi.

Ingredients:

  • 1/2 cup plain flour 
  • 1/2 tsp baking powder 
  • 1 egg 
  • 1/3 cup water 
  • 3 zucchini, coarsely grated 
  • 2 green shallots, trimmed and thinly sliced 
  • 1/4 cup fresh flat-leaf parsley, chopped 
  • 1 tbs fresh mint, chopped 
  • 1/2 tsp chilli powder 
  • 1/2 tsp ground allspice 
  • 2 tbs extra virgin olive oil 
  • 250g haloumi 

Instructions

  1. Whisk flour with baking powder. Make a well in the centre and add egg. Gradually add water, whisking to form a smooth batter.
  2. Add zucchini, shallots, parsley,mint, chilli powder and ground allspice.
  3. Heat 2 tbs extra virgin olive oil in a large non-stick frying pan over high heat. Cook 1/4 cupfuls of batter in the oil, in 2 batches, for 2 minutes each side. Set aside.
  4. Slice haloumi into 9 slices. Cook for 1 minute each side. Stack, layering the zucchini fritters and haloumi. Sprinkle with fresh mint leaves.
