Fragrant chickpeas

Try a taste of Morocco with these deliciously fragrant chickpeas.

To make this dish at home by prescription from the author Gomer would need: 1 tbsp olive oil, 1 onion, halved, sliced, 2 garlic cloves, crushed, 1/4 tsp Coles Brand ground cinnamon, 1/4 tsp cayenne pepper , 1/2 tsp ground turmeric, 2 x 400g cans Coles Brand chickpeas, rinsed, drained, 1 cup vegetable stock , 1/2 cup sultanas, 2 tbsp chopped flat-leaf parsley.
Ingredients:
- 1 tbsp olive oil
- 1 onion, halved, sliced
- 2 garlic cloves, crushed
- 1/4 tsp Coles Brand ground cinnamon
- 1/4 tsp cayenne pepper
- 1/2 tsp ground turmeric
- 2 x 400g cans Coles Brand chickpeas, rinsed, drained
- 1 cup vegetable stock
- 1/2 cup sultanas
- 2 tbsp chopped flat-leaf parsley
Instructions
- Heat the oil in a large deep frying pan over medium heat. Add onion and cook for 5 mins or until golden. Stir in the garlic, cinnamon, cayenne pepper and turmeric for 30 secs.
- Add the chickpeas, stock and sultanas. Bring to a simmer. Cook, stirring occasionally, for 10 mins. Season to taste. Sprinkle with parsley.
