Potatoes with lemon thyme salt

Ingredients:
- 1.5kg sebago potatoes, peeled, cut into 5cm pieces
- 2 tbsp olive oil
- 2 tsp sea salt flakes
- 1 tbsp fresh lemon thyme leaves
Instructions
- Preheat oven to 220°C/200°C fan-forced. Place potato in a large, microwave-safe bowl. Add 2 tablespoons cold water. Cover loosely with plastic wrap. Microwave on HIGH (100%) for 5 minutes or until potato is just tender. Drain. Pat dry with paper towel.
- Transfer to a roasting pan. Drizzle with oil. Toss to coat. Season with pepper. Roast for 45 minutes, turning halfway during cooking, or until browned and crisp.
- Meanwhile, place salt and thyme in a bowl. Using the back of a spoon, crush mixture to combine. Add salt mixture to potato. Toss to coat. Serve.
