Ingredients:

  • 3 cups firmly packed fresh basil leaves 
  • 1 tbsp toasted pine nuts 
  • 3 garlic cloves, quartered 
  • 2 tbsp lemon juice 
  • 1/2 cup reduced-fat ricotta cheese 

Instructions

  1. Place basil, pine nuts, garlic and lemon juice in a processor. Process until finely chopped.
  2. Add ricotta. Season with salt and pepper. Process until just combined. Serve. Serve pesto tossed through hot pasta, with grilled chicken, or as a dip.
