To make this dish at home by prescription from the author Gomer would need: 2 cups Coles Brand Australian tasty cheddar shredded, 150g Castello blue, chopped, 4 Mission original wraps, 2 tbsp olive oil, 100g baby spinach , 2 tomatoes, chopped, 1/2 avocado, chopped, 1/4 cup pine nuts, roasted , Balsamic dressing, to serve.

Ingredients:

  • 2 cups Coles Brand Australian tasty cheddar shredded 
  • 150g Castello blue, chopped 
  • 4 Mission original wraps 
  • 2 tbsp olive oil 
  • 100g baby spinach 
  • 2 tomatoes, chopped 
  • 1/2 avocado, chopped 
  • 1/4 cup pine nuts, roasted 
  • Balsamic dressing, to serve 

Instructions

  1. Combine the blue cheese and cheddar in a bowl. Spread over 2 wraps. Top each with another wrap to make a stack. Heat the oil in a frying pan over medium-high heat and fry each stack for 3 mins each side or until crisp. Transfer to a plate lined with paper towel. Cut each stack into 8 pieces.
  2. Combine the spinach, tomato, avocado and pine nuts in a bowl. Drizzle over the dressing. Serve with the toasties.
