Nothing tastes better than fresh bread, especially when it comes from your own kitchen.
Recipe «Cornbread» presented in category Recipes / Vegetarian, to prepare this dish you will need no more 30 minutes. To make this dish at home by prescription from the author Gomer would need: 175g strong flour*, sifted with 1 tsp bicarbonate of soda, 150g coarse polenta *, 1 tsp caster sugar, 3 tbsp pepitas, 3 tbsp poppyseeds, plus extra to sprinkle , 75g grated tasty cheese, 1/2 tsp dried chilli flakes, 300ml buttermilk , 1 egg.
Ingredients:
- 175g strong flour*, sifted with 1 tsp bicarbonate of soda
- 150g coarse polenta *
- 1 tsp caster sugar
- 3 tbsp pepitas
- 3 tbsp poppyseeds, plus extra to sprinkle
- 75g grated tasty cheese
- 1/2 tsp dried chilli flakes
- 300ml buttermilk
- 1 egg
Instructions
- Preheat the oven to 180°C. Grease a 7cm-deep, 9cm x 20cm loaf pan.
- In a large bowl, stir together the flour and soda with the polenta, sugar, seeds, cheese, chilli and 1 teaspoon salt.
- Lightly beat buttermilk and egg, then stir into flour mixture using a fork. Pour into the loaf pan and sprinkle with extra poppyseeds. Bake for 25-30 minutes until a skewer inserted into the centre comes out clean. Cool in pan for 5 minutes, then turn out onto a rack to cool completely. Serve with chilli and herbed rice.
