Ginger and honey baby carrots

Ingredients:

  • 2 tbsp Coles pure olive oil 
  • 5cm piece ginger, grated 
  • 750g small carrots, peeled, quartered lengthways 
  • 1 tbsp Coles soy sauce 
  • 1 tbsp Coles pure Australian honey 

Instructions

  1. Heat oil in a large frying pan on medium. Cook ginger for 1 min, or until fragrant. Add carrots and cook for 3-4 mins, or until well-coated and beginning to soften.
  2. Add soy, honey and 1/4 cup of water. Simmer for 2-3 mins, or until carrots are tender.
