Zucchini, tomato and bocconcini pizza

To make this dish at home by prescription from the author Gomer would need: 2 large pizza bases, 1 cup Coles Brand tomato, onion and garlic pasta sauce, 150g cherry bocconcini, coarsely torn, 3 zucchini, thinly sliced lengthways into ribbons, 250g cherry truss tomatoes , 1/4 cup pitted green olives, 1/2 cup basil pesto, Basil leaves, to serve .

Ingredients:

  • 2 large pizza bases 
  • 1 cup Coles Brand tomato, onion and garlic pasta sauce 
  • 150g cherry bocconcini, coarsely torn 
  • 3 zucchini, thinly sliced lengthways into ribbons 
  • 250g cherry truss tomatoes 
  • 1/4 cup pitted green olives 
  • 1/2 cup basil pesto 
  • Basil leaves, to serve 

Instructions

  1. Preheat oven to 240C. Line 2 baking trays with baking paper.
  2. Place the pizza bases on the lined trays. Spread evenly with pasta sauce. Top with bocconcini, zucchini, cherry tomatoes and olives.
  3. Bake for 10 mins or until bocconcini melts and pizza is heated through. Top with dollops of pesto and sprinkle with basil leaves.
