To make this dish at home by prescription from the author Gomer would need: 2 large pizza bases, 1 cup Coles Brand tomato, onion and garlic pasta sauce, 150g cherry bocconcini, coarsely torn, 3 zucchini, thinly sliced lengthways into ribbons, 250g cherry truss tomatoes , 1/4 cup pitted green olives, 1/2 cup basil pesto, Basil leaves, to serve .
Ingredients:
- 2 large pizza bases
- 1 cup Coles Brand tomato, onion and garlic pasta sauce
- 150g cherry bocconcini, coarsely torn
- 3 zucchini, thinly sliced lengthways into ribbons
- 250g cherry truss tomatoes
- 1/4 cup pitted green olives
- 1/2 cup basil pesto
- Basil leaves, to serve
Instructions
- Preheat oven to 240C. Line 2 baking trays with baking paper.
- Place the pizza bases on the lined trays. Spread evenly with pasta sauce. Top with bocconcini, zucchini, cherry tomatoes and olives.
- Bake for 10 mins or until bocconcini melts and pizza is heated through. Top with dollops of pesto and sprinkle with basil leaves.
