Ingredients:
- 500g frozen broad beans
- 2 tbsp extra virgin olive oil
- 1 tbsp white wine vinegar
- 1 shallot , chopped
- 1 tbsp chopped chives
- 1 tbsp chopped parsley
- 1 tbsp chopped mint
- 50g Coles Brand goat's cheese, crumbled
Instructions
- Place broad beans in a large heatproof bowl. Pour over boiling water to cover. Set aside for 5 mins, to soak. Peel and discard skins.
- Mix together oil, vinegar and shallot in a bowl. Add peeled broad beans and toss to coat. Transfer to a serving plate. Scatter over herbs and goat's cheese.
