To make this dish at home by prescription from the author Gomer would need: 500g frozen broad beans, 2 tbsp extra virgin olive oil, 1 tbsp white wine vinegar, 1 shallot , chopped, 1 tbsp chopped chives , 1 tbsp chopped parsley, 1 tbsp chopped mint, 50g Coles Brand goat's cheese, crumbled .

Ingredients:

  • 500g frozen broad beans 
  • 2 tbsp extra virgin olive oil 
  • 1 tbsp white wine vinegar 
  • 1 shallot , chopped 
  • 1 tbsp chopped chives 
  • 1 tbsp chopped parsley 
  • 1 tbsp chopped mint 
  • 50g Coles Brand goat's cheese, crumbled 

Instructions

  1. Place broad beans in a large heatproof bowl. Pour over boiling water to cover. Set aside for 5 mins, to soak. Peel and discard skins.
  2. Mix together oil, vinegar and shallot in a bowl. Add peeled broad beans and toss to coat. Transfer to a serving plate. Scatter over herbs and goat's cheese.
