To make this dish at home by prescription from the author Gomer would need: 700g Golden Delight potatoes, scrubbed, coarsely chopped, 1 head broccoli, cut into florets, stems thinly sliced, 40g butter, at room temperature, 1 tsp finely grated lemon rind, 1 garlic clove, crushed , 2 tbsp milk, warmed, 2 spring onions , thinly sliced .
Ingredients:
- 700g Golden Delight potatoes, scrubbed, coarsely chopped
- 1 head broccoli, cut into florets, stems thinly sliced
- 40g butter, at room temperature
- 1 tsp finely grated lemon rind
- 1 garlic clove, crushed
- 2 tbsp milk, warmed
- 2 spring onions , thinly sliced
Instructions
- Place potato and broccoli stems in a large saucepan. Cover with water. Bring to the boil over high heat. Season with salt. Cook for 10 minutes. Add broccoli florets and cook for 6-8 minutes or until vegetables are tender. Drain. Return to the pan.
- Meanwhile, combine the butter, lemon rind and garlic in a small bowl. Add half the butter mixture to the potato mixture and mash until just combined. Add the milk and two-thirds of the spring onion. Season. Beat with a wooden spoon until combined. Transfer to a serving bowl and top with remaining butter mixture and spring onion.
