Semi-roasted tomatoes

This herby sweet roasted tomatoes make an excellent side dish or pizza topping.

Ingredients:

  • 1.5kg roma tomatoes, halved 
  • 6 sprigs fresh thyme, halved 
  • 1 tsp dried oregano leaves 
  • 2 tbsp olive oil 

Instructions

  1. Preheat oven to 200°C/180°C fan-forced. Line a large baking tray with baking paper. Place tomatoes, cut-side up, on prepared tray. Sprinkle with thyme and oregano. Drizzle with oil. Season with salt and pepper.
  2. Roast for 50 minutes or until softened and lightly caramelised. Allow to cool.
