Sauteed green beans with pistachios

Ingredients:

  • 600g green beans, topped 
  • 60g butter 
  • 2 garlic cloves, finely chopped 
  • 115g pistachio kernels, coarsely chopped 
  • 1/4 cup chopped fresh continental parsley 

Instructions

  1. Cook the beans in a large saucepan of boiling water for 2-3 minutes or until the beans are bright green and tender crisp. Drain.
  2. Heat the butter in a large frying pan. Add the garlic and cook, stirring, for 1 minute.
  3. Add the beans and pistachio to the pan. Cook, tossing, for 2 minutes or until the beans are heated though. Season with salt and pepper. Stir in the parsley to serve.
