To make this dish at home by prescription from the author Gomer would need: 3 small ripe tomatoes, halved, deseeded, coarsely chopped, 1 x 170g jar marinated artichoke hearts, drained reserving 2 tsp of marinade, quartered, 150g low-fat feta, cut into 1cm pieces, 1/4 cup loosely packed fresh continental parsley, Salt , Freshly ground black pepper .

Ingredients:

  • 3 small ripe tomatoes, halved, deseeded, coarsely chopped 
  • 1 x 170g jar marinated artichoke hearts, drained reserving 2 tsp of marinade, quartered 
  • 150g low-fat feta, cut into 1cm pieces 
  • 1/4 cup loosely packed fresh continental parsley 
  • Salt 
  • Freshly ground black pepper 

Instructions

  1. Combine the tomato, artichoke, feta, parsley and reserved artichoke marinade in a serving bowl. Season with salt and pepper and gently toss until combined. Serve immediately.
