Cooking Vegetarian Green jaffle

If you missed your green smoothie for breakfast, make it up at lunch time with our tasty green toastie.

  1. Spread bread with butter. Place 1 slice, butter-side down, on a sandwich press. Coarsely mash avocado over bread. Top with cottage cheese, jalapeno, spinach and sliced cheese. Season with pepper.
  2. Finish with remaining bread slice, butter-side up. Bring down sandwich press lid and cook for 2-3 minutes or until toasted. Cut to serve.
