Ingredients:

  • 1.5kg Desiree potatoes 
  • 1/4 cup olive oil 
  • 250g light cream cheese, softened 
  • 1/4 cup sweet chilli sauce 
  • 2 tbsp fresh lime juice 

Instructions

  1. Preheat oven to 220°C. Line a large baking tray with baking paper.
  2. Wash potatoes and cut into wedges. Place into a large bowl. Add oil, and salt and pepper. Toss well to coat. Place onto baking tray in a single layer.
  3. Bake for 40 to 45 minutes, turning occasionally, or until golden and tender.
  4. Make creamy chilli sauce Place cream cheese, sweet chilli sauce and lime juice into a food processor. Process until well combined and smooth. Transfer to a bowl. Serve with wedges.
