To make this dish at home by prescription from the author Gomer would need: 2 firm buerre bosc pears, halved, core removed, thinly sliced lengthways, 70g pkt baby rocket, 110g goat's cheese, crumbled, Freshly ground pepper, 1 1/2 tbsp light olive oil , 2 tbsp balsamic vinegar, 8 x 2cm-thick slices ciabatta or crusty bread, Olive oil spread .
Ingredients:
- 2 firm buerre bosc pears, halved, core removed, thinly sliced lengthways
- 70g pkt baby rocket
- 110g goat's cheese, crumbled
- Freshly ground pepper
- 1 1/2 tbsp light olive oil
- 2 tbsp balsamic vinegar
- 8 x 2cm-thick slices ciabatta or crusty bread
- Olive oil spread
Instructions
- Combine the pear, rocket and goat's cheese in a large bowl. Season with lots of pepper. Drizzle with the olive oil and balsamic vinegar. Toss mixture to combine.
- Preheat a sandwich press. Spread each slice of ciabatta with a little olive oil spread. Toast for 5 minutes or until crisp and golden. Serve immediately with the salad.
