Ingredients:

  • 4 large field mushrooms 
  • 2 tbsp olive oil 
  • 1 tbsp lemon juice 
  • 8 slices woodfired bread 
  • 1/2 clove garlic 
  • 200g goat's cheese 
  • baby rocket leaves 
  • salt and cracked black pepper 

Instructions

  1. Slice field mushrooms into quarters. Heat olive oil in a non-stick frying pan over medium to high heat. Add the mushrooms and cook, turning regularly, until they are golden brown and softened.
  2. Sprinkle lemon juice, salt and cracked black pepper over the mushrooms, toss, remove from heat and keep warm.
  3. Grill woodfired bread until golden. Remove from grill, brush each slice with a little extra olive oil and rub with the cut side of half a clove of garlic.
  4. Spread goat's cheese over the toasted bread and top with baby rocket leaves.
  5. Place a couple of pieces of mushroom on each bruschetta, sprinkle with extra cracked black pepper, and serve.
